In response to Toby Young's article concerning the state of London restaurants, I would like to state a number of things. As the owner of The Restaurant Ingredient Consultancy, I visit scores of restaurants every week and although some places fall below par the majority are good. Obviously in an industry that employs tens of thousands of people there are going to instances of poor service. But there is so much quality, both in terms of cuisine and service throughout the Capital that I find it amazing that your leading article should be so negative. Of course service charges are a bone of contention, but for some operators they are necessary to stay afloat.
Maybe Mr Young gets the service he describes because people are sick of some critics constantly giving them a hard time when they have plenty of regular customers that know the quality of their cuisine and service. London now has an international reputation for having quality restaurants, which needed to be stated in Mr Young's article.
