Christmas is a good time to start a customer database if you don't already have one. Anyone who asks for a Christmas menu should be encouraged to leave a few basic details such as their name, address, email and phone numbers so you can send them details of future promotions and menu changes.
Always take a deposit for office parties.
Watch out for a scam where people ask for a menu to be faxed to a premium 0906 number, which can cost £1.50 a page.
Leave the numbers of a few reliable taxi companies next to the phone. Unreliable taxi firms will mean you can't turn tables as fast as you would like.
Keep an extra eye on what your staff drink.
